Intimidated BY Staff ? NO WAY!
WAt abt this ? a head-waiter of the day ?? but a sure dumb one, its my first day on job after all. I am the one guiding my staff and drive them to great sucess or fall to drastic failure in business. well, no instruction was given, the procedues of work played by every role was thought once, and now its for real, we are going to run it... SHIT hell...
though jobs were harsh, especially for head-waiter who bear all responsiblities, who sort out work to staff, and who explain staff thing which i dun even know wat has to be done... i Still get to enjoy myself, cos several friends dun mind mi bossing round, hope they know i am tryin to put up an act there!!! haha, guess wat... PICS ..
clean up area- where the hell my sommelier, runner and waiter went to ? they are suppose to polish up glasses, clear up the glass trays, distribute the cutlery and cockery to respective sector. argh
finally all looked here, they were enjoying cleaning too..i want to be a waiter, clean up staff too... i guess
here's the tricky part which i hate being a captain. yes, he(wee jun) is smiling but was he really happy. his job is to place cutlery on dining table, to set it up.BUT its definately not as easy as u guys thinks. the above placing of glasses and cutlery on that dining table is a failure, believe or not ? its hard to explain, but nobody can judge things that when wrong on the placing except for teachers

WEll, before before before this very module, we had our RESTAURANT SHOWMANSHIP lesson, this is where u learn to cook in front of customer. To present them our services in the restaurant to make it a more lively and interesting moment for the consumer. MAKE it more worthwhile while spending time here. therefore, today we learn on cooking flambE dishes ! Voom ,boom ! flames !=)
she's doing a lobster blisque or a prawn instead... but its sure a eye opener for 1st timer...
i was doing pepper steak today , but my friend took a video of it, i can't place it up.. WASTED !
I've done FLAMBE for the first time and i graduate from it... haha... for this module, we need to memorise all the procedure and ingredient used for every recipes, including sauces, dessert, main dishes, appetiser and drinks... soon, i will become a junoir chef in no time...WAHAHA...
